linda made bread today.

she's been making bread all week, starting with a basic whole wheat, then a basic french/italian style (which garnered complements at thanksgiving dinner, from people who pride themselves on being bread-eaters).

but today she made bread. noteworthy bread.

it's called "vienna bread" - its a crusty bread. you make a sponge first, let it ferment for an hour, then add the rest of the flour and such (she used 1 cup whole wheat flour and 4 cups bread flour), put an egg wash and sprinkle sesame seeds on it and bake. came out perfect, crusty and light, slightly moist on the inside.

definitely noteworthy.
